Our "popcorn rice" is the Basmati variety, literally translated as "queen
of fragrance". It has a perfumy, nutlike flavor and aroma because it is
aged to decrease its moisture content. Originally developed in Northern
India, Basmati rice was only recently developed for Louisiana's rich delta
soil and favorable climatic conditions. This migration has further
enhanced it's flavor and aromatic qualities. Basmati is a long grain,
which means that the grains are 4 to 5 times the size of their width. Long
grain rice produces light, dry grains that separate easily. The white
variety has the husk, bran, and germ removed. This is sometimes referred
to as "polished rice". The brown only has the inedible outer husk removed.
The nutritious, high fiber bran coating gives the brown rice a light tan
color, nuttier flavor and chewy texture.
Rice is cholesterol and gluten-free, low in sodium, contains only a trace
of fat and is a great source of complex carbohydrates. Enjoy these
