Arapey
Grating Cheese from Uruguay

Uruguay is well known for its agricultural productivity. In 1988 agricultural
activity directly generated 13 percent of Uruguay's GDP and provided over half
the value of exports. Indirectly, agriculture supports the country's robust
tanning and textile industries as well. From this country of 176,000 sq km
(about the size of Oregon) with over 3.3 million inhabitants comes a cheese
called Arapey.
Named after a famous spa resort on Uruguay's coast, this grating cheese is made
in the same style as Argentine Reggianito. Hard and brittle but not overly dry,
it has the perfect texture for grating purposes. Enjoy it sprinkled over pasta
or soup, or use it in any recipe that requires so-called "Parmesan" cheese. On
