Clotted Cream

A potted history of Devonshire Creams P1 P2

Devon CreamA potted history of Devonshire Creams
The county of Devon lies in the greenest corner of England, where the local dairy herds produce the country's richest milk, making this area famous for its heavenly cream. The most well known is Clotted Cream, which was traditionally made on the farm by scalding new milk in shallow pans over a stick fire - a long and painstaking process. Modern dairies use steam-heated pans to produce the thick, rich cream, which is delicious on apple pie and is the essential ingredient of a traditional English Cream Tea. Fresh Clotted Cream has a short shelf life of up to 21 days and is difficult to preserve, even by deep-freezing, which tends to destroy the cream's unique texture. Following World War II, the only cream available with a long shelf life was tinned sterilized cream with a poor flavor. The Cow & Gate Company, famous in England since the turn of the century for bottled baby foods, turned its attention towards developing an innovative product. The story goes that Colonel Gates, the Chairman, told his Chemist and Production Director one Friday morning to produce a cream with a long life that tasted like fresh cream - and by Monday morning!

Although it took a little longer than one weekend, a product was created and launched in the 1950s under the brand "Farmer's Wife Cow & Gate Double Devon Cream". Sales grew to over 1 million jars per year, but as modern refrigeration became more readily available, production went into decline.

In 1982 The Devon Cream Company began making extended life Double Devon Cream, using Cow & Gate's original equipment and further developing the original vacuum and heat processes, thereby improving the flavor. Double Devon Cream is now exported worldwide, along with a wide range of Clotted Creams. These creams have a flavor close to fresh cream, but with a shelf life of between six and twelve months. The difference between Double Devon Cream and Traditional Clotted Cream is described below: Buy It, Now!icon|More Info!icon
